Manager Production Line

About the role:

In this interesting role, you will be responsible for all aspects of bakery and pastry production with a primary focus on the commissioning and management of the new pastry lines, bakery and pastry production, staffing, forecasting, preparation, productivity and quality control. Additionally you will be responsible for improving the culinary quality standards of the QACC production, including safe food production in accordance with HACCP standards.

To achieve success in this role you will need to:

▪Develop and implement future strategy for the business needs ensuring the department’s requirements are identified and represented.

▪ Develop and execute succession plan for department while identifying required training requirement to increase department’s overall performance.

▪ Develop contingency plans and risk management for the department in cooperation with the company’s subject matter experts.

▪ Develop and measure department performance KPIs to drive continuous improvement processes.

▪ Lead the installation and commissioning of the new pastry line, including factory acceptance test and engagement with all suppliers.

▪ Develop a training framework of staff on how to operate the new production line.

▪ Drive the development and implementation of SOPs required to operate equipment and production line.

▪ Facilitate, educate, motivate, coach, counsel and guide the production group to ensure that they have the ability to deliver results.

▪ Oversee menu/product development for new products to showcase during presentation to customer.

▪ Manage and develop production systems to ensure increased productivity, quality, food safety and lower costs.

▪ Ensure the cost effective utilization of staff and equipment.

▪ Analyze and verify production waste reports to minimize food variance.

▪ Analyze food cost variance reports provided by finance to identify gaps in production, ordering and invoicing.

▪ Review quality of purchased goods is in line with product specifications.

▪ Focus on current operational performance and develop/implement processes, procedures, systems, metrics and reporting to support, improve and innovate manufacturing business.

▪ Maintain effective relations with other Management team (e.g. Materials Control, Supply Chain, Stores & Receiving, QA & Hygiene, and Maintenance).

▪ Assure the timely delivery of the department’s services via forecasting and planning of labor requirements.

▪ Oversee the work of chefs, cooks and other kitchen employees to assure that food production costs are within budget.

▪ Prepare the department’s annual budget including all functionalities, overhead and operational.

▪ Perform other department duties related to his/her position as directed by the Head of the Department.

Qualifications

About you:

You should have at least a diploma degree qualification and 9 years of job related experience in a similar role. It is highly beneficial if you have previous experience in product development.

In addition, you will have the following job specific skills:

▪ Proficient computer skills, especially in Excel.

▪ Good spoken & written English.

▪ Ability to communicate on various levels to include management, customers, client, and associate

▪ Proficient in menu development, cost controls.

▪ Ability to multi-task

▪ Culinary creativity and menu writing abilities.

▪ Managerial skills – Ability to delegate work, set clear direction and manage workflow. Strong mentoring and coaching skills. Ability to train and develop subordinate’s skills. Ability to foster teamwork among team members.

▪ Good knowledge of food and catering trends with a focus on quality, production, sanitation and food cost controls.
